Bamboo Sushi has one of the most rigorous and in-depth training programs in the hospitality industry. With so much sustainability and impact content to learn within the mission-driven restaurant group, how can you complement the in-person training sessions with an easy-to-follow resource for new employees to read at their own pace? The answer was what the new team members began to call “the red book” - a multi-page guide that easily captures the full story of Bamboo Sushi in a visually impactful format. In some restaurants, this internal guide was also transformed into a guest-facing art piece in the waiting areas so this book of sustainability was available for all to read, helping drive brand engagement. While the menu at Bamboo Sushi has some basic sustainability information, such as environmental ratings for each of its fish and a small glossary of catch methods, there was a massive opportunity to give guests a piece of collateral that allowed them to learn more at their own pace. In 2018, the brand debuted The Quarterly, an in-store periodical that highlighted impact metrics for the restaurant company as well as a seasonal lesson including basic information about the group’s sustainability model. Changing with the seasons, The Quarterly is read by guests as a part of the menu design, but also given in takeout bags and available to peruse while waiting for a table.
